Enrol now · Self-paced onlineAbout this course
Build practical skills to audit a food business's HACCP and good hygiene arrangements with a clear purpose, fair evidence and useful conclusions. This online course is designed for staff who already understand HACCP and will plan, conduct or support internal audits.
Follow Harbour Table Foods, an original fictional chilled-meal business, from supplier and ingredient changes through cooking, cooling, packing, storage, dispatch and release. Practise reviewing a HACCP study, following real process routes, interviewing staff, selecting records and responding to contradictory evidence. All case limits are supplied teaching criteria; they do not validate another business's process.
Eighteen substantial lessons combine colourful interactive slides, illustrated audit walkthroughs, at least thirty-six practice decisions with feedback on every choice, a marked check in each lesson and paced written case activities with worked reasoning. The integrated exercise connects planning, sampling, floor and document evidence, findings, reporting, immediate product protection, cause investigation and effectiveness follow-up.
Learn to distinguish validation, monitoring and verification; assess GHP and CCP controls; evaluate deviations and traceability; connect applicable requirements with objective evidence; and report conclusions with honest sample and access limits. Current official Codex, FAO, MPI and ISO public guidance informs the course. Optional audit tools are distinguished from the requirements that actually apply to the business. No licensed-standard clauses are reproduced.
Allow approximately six to eight hours. A suggested schedule is twenty minutes for each of eighteen lessons and activities, then forty minutes for the final exam: six hours forty minutes overall. Pass all eighteen lesson checks before the forty-question final exam. At least thirty-two correct answers, 80%, are required to pass. Existing student progress and assessment retry arrangements apply.
The total fee is NZ$55 per learner, including GST. Successful completion earns an Access Food course-completion certificate. It supports auditor development and further workplace practice; it does not confer MPI, NZQA or ISO accreditation, professional auditor certification, regulatory verifier recognition, employer certification or automatic workplace competence. An internal organisational audit does not replace required regulatory verification or external certification.
