About this course

Build the practical checks and decisions that support safe food manufacturing. This course is for food production operators, shift leaders and small-manufacturer supervisors applying everyday factory controls in New Zealand.

Follow Harbour Bend Foods, a fictional dry-snack manufacturer facing an unfinished changeover. A missing maintenance washer, sesame under a belt ledge and old packaging rolls create different evidence questions before restart. A separate historic damaged-scraper incident explores affected stock and distributed food. Work out what is known, what must stay controlled and what evidence an authorised person needs before deciding.

Fourteen substantial interactive lessons cover GMP and good operating practice; contamination routes and hygienic movement; people and contractors; receiving; storage and stock identity; equipment and maintenance; suitable cleaning; sanitising and chemicals; pests, waste and water; allergen changeovers and line clearance; packaging and foreign matter; holds and deviations; honest records and handovers; and an integrated factory review. Plain-English teaching, original worked examples, practical choices with feedback for every option, notebook activities, neutral illustrated aids and marked checks support learning.

This course applies the supporting controls around production. It goes beyond introductory food handling by focusing on factory routes, setup, evidence and handback decisions. It complements HACCP learning without designing or validating a product-specific HACCP plan. Use the actual registered plan or programme, suitable work instructions and relevant specialist requirements. Required controls and records are distinguished from optional methods and training worksheets.

Allow approximately four hours including worked practice and the final exam; individual pace varies. Pass all 14 lesson checks before the 30-question final exam. At least 24 correct answers (80%) are required to pass. NZ$50 plus NZ$7.50 GST = NZ$57.50 total per learner.

Successful completion earns an Access Food course-completion certificate. This is food manufacturing learning: it does not provide pharmaceutical GMP qualifications, MPI/NZQA/ISO accreditation, factory or standard certification, business/product approval, verifier qualification or proof of practical workplace competence.

Who this course is for

How you will learn

Move through presentation-style slides at your own pace. Select topics to reveal more detail, work through practical scenarios and complete the knowledge checks along the way. The final exam presents one question at a time with an answer-review screen before submission. Your student account saves completed lessons and assessment results.

Assessment and completion

Pass all 14 marked lesson checks before the 30-question final exam. At least 24 correct answers (80%) are required to pass. Practice decisions provide feedback for every option and do not count towards the final score. Notebook activities use fictional or anonymised information and do not replace required workplace records or task-specific competence assessment.

Successful completion earns an Access Food course-completion certificate. It is not pharmaceutical GMP qualification, MPI/NZQA/ISO accreditation, factory or standard certification, business/product approval, verifier qualification or proof of practical workplace competence.

Before you enrol

Basic food-production experience is helpful. Use current workplace procedures and the registered plan/programme and specialist requirements applicable to the actual operation. A device and internet access suitable for interactive reading are needed. Use fictional or anonymised notes and keep confidential business and personal information private.
