Understand the information behind a shelf-life decision before you put a date on a product. This introductory course helps small food producers and brand owners describe their product, ask better questions, organise evidence and prepare a useful brief for a laboratory or suitably qualified food specialist.
Follow Pounamu Kitchen, a fictional maker considering a different package and larger fill for a chilled ready-to-eat dip. Compare the old and proposed product files, identify what an earlier report actually covered and keep facts, assumptions and unanswered questions separate. A delivery-temperature evidence gap adds a separate question about affected stock. The worked examples do not determine a safe number of days or authorise product release.
Twelve substantial interactive lessons cover safety and quality; intended consumers and use; ingredients and formulation; process history; packaging and storage; distribution and handling; the evidence behind use-by and best-before dates; questions for laboratories and technologists; samples and report limits; changes; preparing a product evidence brief; and an integrated file-review exercise. Practical choices give feedback for every option. Notebook activities, worked discussions and marked lesson checks support learning.
Use current primary New Zealand guidance with the actual requirements for your product and business. Required duties and records are distinguished from optional briefing tools and good practice. This course has no universal safe-days calculator, pH-only safety guarantee or standard testing panel for all foods. It does not teach businesses to conduct pathogen challenge tests.
Allow about 3 hours including activities and the final exam; individual pace varies. Pass all 12 lesson checks before the 30-question final exam. At least 24 correct answers (80%) are required to pass. The online learning costs NZ$50 plus NZ$7.50 GST: NZ$57.50 total per learner. Laboratory testing, sampling studies and individual technical work are separate services and are not included.
Successful completion earns an Access Food course-completion certificate. A course pass cannot validate a recipe, process, study, test panel or commercial shelf life, approve a label or authorise sale of a product. It is not MPI, NZQA or ISO accreditation or a verifier qualification.
For product-specific help, visit our Shelf Life Testing Support service at https://www.foodverification.co.nz/shelf-life-testing/ for study planning, laboratory coordination and review support. Suitable third-party laboratories perform testing where required. For fuller label-review learning, see NZ Food Labelling and Allergen Checks. Advanced HACCP covers deeper validation and change-control reasoning.

Assessment and completion
Pass all 12 marked lesson checks before the 30-question final exam. At least 24 correct answers (80%) are required to pass. Practice decisions provide feedback for every option and do not count towards the final score. Notebook exercises use fictional or anonymised information and do not validate a real product or replace required business records or specialist work.
Successful completion earns an Access Food course-completion certificate. It does not validate a recipe, process, study, test panel or commercial shelf life, approve a product or label, authorise sale, or provide MPI, NZQA or ISO accreditation or a verifier qualification.
