About this course

Build a traceability system that helps your team find affected food and act promptly when something goes wrong. This course is for New Zealand food-business owners, supervisors and staff responsible for traceability, incident response and recall exercises.

Follow Rimu Ridge Snacks, a fictional maker and packer facing a supplier alert. Work through receipt lots, ingredient use, finished batches, controlled rework, repacking, dispatch, retail sales and food-service use. A consistent case ledger shows how to define scope, track unknowns and reconcile quantities without counting returned or disposed stock twice. A separate packing-artwork example explores an undeclared-allergen concern.

Fourteen substantial interactive lessons cover responsibilities and applicable requirements; supplier and receipt identity; lot creation and internal movements; ingredient and rework links; distribution records; reliable systems; evidence-based scope; recall decisions; immediate stop and hold actions; controlled communications; quantity reconciliation and effectiveness; safe mock recall planning; honest verifier evidence; and an integrated exercise with corrective-action follow-through. Worked examples, practical choices with feedback, notebook activities and marked lesson checks support learning.

Use current primary New Zealand guidance alongside the business's actual plan, programme and specialist requirements. Required information and duties are distinguished from optional forms, exercise targets and good practice. A mock recall uses clearly marked simulation material and controlled participants. If it reveals a real unsafe-food issue, real protective action and notification duties take priority.

Allow approximately 3โ€“4 hours including activities and the final exam; individual pace varies. Pass all 14 lesson checks before the 30-question final exam. At least 24 correct answers (80%) are required to pass. The fee is NZ$50 plus NZ$7.50 GST: NZ$57.50 total per learner.

Successful completion earns an Access Food course-completion certificate. This course does not provide MPI, NZQA or ISO accreditation, recognised verifier status, business or product approval, recall approval, a guaranteed verification pass or proof of practical competence.

How you will learn

Move through presentation-style slides at your own pace. Select topics to reveal more detail, work through practical scenarios and complete the knowledge checks along the way. The final exam presents one question at a time with an answer-review screen before submission. Your student account saves completed lessons and assessment results.

Assessment and completion

Pass all 14 marked lesson checks before the 30-question final exam. At least 24 correct answers (80%) are required to pass. Practice decisions give feedback for every option and do not count towards the final score. Notebook activities use fictional or anonymised material and do not replace the business's required records, workplace assessment or actual recall duties.

Successful completion earns an Access Food course-completion certificate. It is not MPI, NZQA or ISO accreditation, a recognised verifier qualification, business or product approval, recall approval, a guaranteed verification pass or proof of practical competence.
