About this course

Build the knowledge to manage food safety day to day in an NP2 bakery. This course uses plain English, colourful interactive slides, bakery pictures, practical decisions and fictional case studies for commercial and home-based operations. Work through ingredient receiving, proven processing methods, hygiene, cleaning, pests, suitable water, allergens, labels, storage, transport and traceability.

Learn which checks and records apply to your products and processes, and how mandatory records differ from optional good-practice logs. Worked examples show how to complete useful evidence, investigate problems and prepare for verification. Practise realistic verifier questions with honest answers supported by records and demonstrations.

The course is for businesses whose actual activities fit National Programme 2. Bakery size or a home location does not decide the programme. Check your full product range and activities with MPI My Food Rules and your registration authority when needed, especially before adding higher-risk products or changing processes. The course does not determine your registration category or guarantee a verification result.

Training content is based on current MPI NP2 guidance and applicable official records guidance, checked for this release. Client access codes, when supplied by Access Food, unlock this course through each learner’s individual account. Other learners pay the displayed course fee.

How you will learn

Move through presentation-style slides at your own pace. Select topics to reveal more detail, work through practical scenarios and complete the knowledge checks along the way. The final exam presents one question at a time with an answer-review screen before submission. Your student account saves completed lessons and assessment results.

Assessment and completion

Complete all 14 lesson knowledge checks before the final exam. The exam has 30 questions. Pass with at least 24 correct answers (80%). Practice scenarios provide feedback and can be retried.

Pass the final exam to receive an Access Food course-completion certificate, available as a PDF through the existing student system. This is not MPI or NZQA accreditation, a verifier qualification, or confirmation of workplace competence or business compliance.

Before you enrol

Basic English reading skills and internet access. You do not need to upload workplace records. Confirm that your bakery activities fit NP2; use MPI My Food Rules and your registration authority if unsure.
