About this course

Start with a clear description of the food business you want to run. This beginner online course helps prospective New Zealand owners organise their ideas, use current official guidance and prepare useful questions for the appropriate authority and food specialists. It suits people considering home-based, shared-kitchen, market, online or small commercial operations. No previous regulatory knowledge is assumed.

Follow Kōtare Pantry, an original fictional start-up. Aroha first proposes selling unopened, manufacturer-packaged shelf-stable condiments online from home. She then considers making chilled yoghurt-and-herb dips and later supplying larger tubs to cafés. Every change stays a proposal while learners identify what must be checked. The actual products, activities, sites, customers and distribution determine the applicable route; labels such as small, home-based or online do not.

Twelve substantial interactive lessons take you from an activity map through official rules, registration and verification planning, premises questions, suppliers and allergens, process mapping, packaging and shelf-life evidence, sales and delivery, people and records, budgeting enquiries, changes and a final launch-readiness file. Worked examples, choices with feedback for every option and optional written planning tasks help you build your own actions list. Required duties and records under the applicable system are distinguished from recommended planning tools.

Allow approximately 3–4 hours including practice and assessment; individual pace varies. Pass all 12 marked lesson checks before the 30-question final exam. At least 24 correct answers (80%) are required to pass. The fee is NZ$50 plus NZ$7.50 GST: NZ$57.50 total per learner. Registration, verification, evaluation, laboratory work and individual professional advice are separate and are not included.

Successful completion earns an Access Food course-completion certificate. This is planning education. It does not assign a programme or exemption, register a business, approve premises or a product, validate a recipe, process or shelf life, authorise opening or sale, or demonstrate every practical skill. It is not MPI, NZQA or ISO accreditation or a regulatory-verifier qualification. No approval timeline or authority fee is promised.

Once the actual route is confirmed, choose detailed operational learning that fits your activities. National Programme 1, NP2 bakery or sauces and preserves, NP3 dairy and superette, or Food Control Plan manager training may be relevant; you do not need to buy every course. Separate NZ Food Labelling and Allergen Checks and Food Shelf-Life Basics courses provide deeper learning in those topics. Free official guidance and the existing registration and verification information remain available alongside this paid course.

This course covers food-safety start-up planning rather than comprehensive legal, tax, employment, marketing or financial advice. Importing, exporting, animal-product or wine activities, specialist processing and foods for vulnerable consumers may need additional rules and specialist help. Use current My Food Rules and the appropriate authority for the full intended scope.

How you will learn

Move through presentation-style slides at your own pace. Select topics to reveal more detail, work through practical scenarios and complete the knowledge checks along the way. The final exam presents one question at a time with an answer-review screen before submission. Your student account saves completed lessons and assessment results.

Assessment and completion

Pass all 12 marked lesson checks before the 30-question final exam. At least 24 correct answers (80%) are required to pass. Practice decisions give feedback for every choice and do not count towards the final score. Optional written activities use fictional or anonymised information and do not replace required business records, authority decisions or professional work.

Successful completion earns an Access Food course-completion certificate only. It does not register or approve a business, premises, product, recipe, process or shelf life, authorise opening or sale, provide MPI, NZQA or ISO accreditation or a verifier qualification, or demonstrate every practical skill.
