Build a practical approach to food fraud prevention. VACCP Food Fraud Prevention Training helps food business owners, managers and food safety teams assess exposure to economically motivated deception and maintain an evidence-based mitigation plan.
Follow two original fictional cases. Awa Pantry assesses an ingredient offer during a supply shortage, while South Coast Meals checks evidence supporting a fish-species claim. Compare supplier information, decide what a certificate actually establishes, manage unresolved stock and explain the evidence needed before release.
Twelve detailed lessons combine colourful interactive slides, twelve illustrated walkthroughs, twenty-four decisions with feedback for every choice and a marked check in every lesson. Map materials, product claims and supply routes; evaluate relevant intelligence; prioritise vulnerabilities; and strengthen purchasing, supplier approval and change controls.
Learn to check specifications and certificates of analysis, choose suitable sampling and authenticity tests, understand their limits, reconcile traceability and stock information, and respond proportionately to discrepancies. Build clear responsibilities, hold and escalation arrangements, verification activities and review triggers into your prevention plan.
VACCP is commonly associated with vulnerability assessment and critical control points for food fraud prevention. This course explains its relationship with HACCP and TACCP, including situations where authenticity and food safety concerns overlap. Apply the legal, customer and certification-scheme requirements relevant to your operation; suggested tools are clearly distinguished from those requirements.
Allow approximately three hours: 150 minutes for lessons, activities and checks, plus 30 minutes for the final exam. Pass all twelve lesson checks, then complete thirty final questions. At least twenty-four correct answers, 80%, are required to pass. Existing learner-progress and retry arrangements apply.
The fee is NZ$50 plus 15% GST: NZ$7.50 GST, NZ$57.50 total per learner. Successful learners receive an Access Food course-completion certificate. Apply the learning with appropriate technical support and review of your own operation.
Common questions: What is VACCP training? It develops a structured approach to recognising and reducing food-fraud vulnerabilities. How is it different from TACCP? VACCP focuses here on economically motivated deception, while TACCP food-defence training addresses deliberate threats and protective arrangements. The programmes share information and connect to food safety controls when consumers could be affected.

How you will learn
Move through presentation-style slides at your own pace. Select topics to reveal more detail, work through practical scenarios and complete the knowledge checks along the way. The final exam presents one question at a time with an answer-review screen before submission. Your student account saves completed lessons and assessment results.
Assessment and completion
Complete and pass all 12 lesson checks, then complete the 30-question final exam. At least 24 correct answers (80%) are required to pass. The 24 practice decisions explain every choice and do not count towards the exam. Existing retry arrangements apply.
Access Food course-completion certificate after passing the assessment. No MPI, NZQA or certification-scheme approval, accreditation or automatic workplace competence is claimed. Completion does not approve a business's food fraud plan or qualify a professional investigator.
Before you enrol
No formal qualification is required. Familiarity with food purchasing or operations is helpful. Use approved specifications, relevant customer or certification requirements and appropriate technical support for workplace activities. Fictional cases are supplied; keep workplace notes and supplier details private.
